
Lately, I have had this unexplained craving for coffee cake. The dessert tastes delicious but it is sometimes a pain to make in large quantities; be it a problem with not finding all the ingredients, or it's too hard or soft...
Today is Father's Day for most people. I figured since I wanted coffee cake and that it is one of Dad's favorites as well, why not make it for Father's Day breakfast? So, that's exactly what I did. I woke up at 8:15 on Sunday morning and I fed the cat, did a few dishes, and then I jumped online to look for "an easy coffee cake in a mug recipe". I found one right away and thought it looked tasty so I started making it. It was easy, it tasted amazing, and the whole family said it was a hit.

COFFEE CAKE IN A MUG
from Crazy for Crust
Instructions:
1. Spray a mug with Pam or other brand cooking spray. (You mostly just want a light coat on the bottom. The sides aren't really a problem.)
2. Add sugar, flour, salt, baking powder, oil, milk, and vanilla. Stir until thoroughly mixed in.
3. Crumble the brown sugar and cinnamon on top.
4. Microwave for just under a minute. (Depending on microwave wattage, you may want to cook it in 15 second increments.)
5. Tastes best when warm, but if you want it cold you could do that too.
Ingredients:
~ 1 tablespoon granulated white sugar
~ 2 1/2 tablespoons flour
~ 1/8 teaspoon salt
~ 1/4 teaspoon baking powder
~ 1 tablespoon vegetable oil or plain nonfat Greek yogurt (I used sunflower oil for ours and it turned out just fine.)
~ 1 tablespoon of milk of your choice. (Again, Crazy for Crust suggested nonfat milk but I used whole milk instead and it tasted great.)
~ Dash of vanilla
For the Crumble topping:
~ 1/2 tablespoon brown sugar (This is negotiable. For less calories and a more healthy option, you could switch it out for crushed nuts, diced apple, or craisins. Whatever floats your boat, or taste buds, in this case!)
~ 1/4 teaspoon ground cinnamon
*If you are wanting a filling breakfast, or snack, you may want to double the batter recipe because it does not fill the whole mug. It tastes delicious though.
I hope that those of you who try this recipe enjoy it as much as my family and I did. It really doesn't take much time or effort at all so it is definitely easy to make, even when you don't have all the ingredients on hand.
