The Baking Issue #2


So lately, I've begun this baking/cooking adventure. I think it's largely due to the fact that during the summer I have more time on my hands than I do during the school year. Either way, I've found and tried some pretty tasty recipes that I'm passing on to you my dear readers.

DOUBLE CHOCOLATE PEANUT BUTTER MUG COOKIE

 

Instructions:

- Put the measured amount of butter into your favorite mug, and set it aside. Gather the rest of your ingredients and put them next to your work space.

- Place your mug into the microwave for a few seconds. Let the butter soften to a point where it's half melted. (This took about 30 seconds for me.) Then stir it a little bit, just to double check.

- Stir in the sugars, vanilla, and the baking powder. Depending on how strong your vanilla is, the mixture may vary in tints; but as a general rule - stir it until it's a visible tan/ brown.

- Stir in the egg yolk, cocoa, and the flour. This is tricky. I recommend doing it with a fork because this is when the batter gets really thick and resistant. Use your arm muscles!

- Stir in the chocolate chips. Definitely use a fork for this part, if you aren't already using one.

- Now for the Peanut Butter. You have so many options! The recipe calls for Skippy peanut butter and that's what I happened to have on hand, but you could use any spread that you wanted to. Suggestions are Nutella, Skippy Chunky peanut butter, Lotus speculoos spread, or a fruit jam or jelly. Take the spread of your choice and either mix it in thoroughly, or place it gently on top.

Ingredients:

- 1 tablespoon butter

- 1 tablespoon brown sugar

- 1 teaspoon white granulated sugar

- 3 drops vanilla extract (The recipe calls for pure vanilla, but you could easily use imitation vanilla if you really wanted to)

- 1/8 teaspoon baking powder

- 1 egg yolk (You can substitute this for a tablespoon of water or milk but in doing so some of the richness is taken away, and the batter won't rise as high)

- 2 teaspoons cocoa powder

- 1 tablespoon flour

- 1 (heaping) tablespoon of chocolate chips

- 1 tablespoon Peanut Butter (or other spread of your choice)

Enjoy warm or cold!
